Me: Harley has her eye on some baked kale chips. We tried this easy recipe: put bite sized kale on a cookie sheet and drizzle with olive oil and kosher salt. Bake at 350 degrees for 15 minutes. Take out and eat. Yummy, healthy snack.
Kale seems to becoming more popular now...or maybe I'm just noticing it and it's always been around. Anyway, it's sorta a bitter lettuce (not great alone - in my opinion) but I like to add it to a regular spinach salad. I'm seeing more restaurants have kale salads and they are delicious. Baked kale chips are kinda fun and easy. They are light, crispy and satisfy a salt craving. :-)
